Pesto is really easy to make with a few fresh ingredients: basil, garlic, olive oil, nuts, parmesan cheese and salt. Typically pine nuts are used but I never have pine nuts on hand so I just use what I have.
What you’ll need (very approximately – modify as you go to your taste):
2 C Basil Leaves
(Optional: use kale, cilantro or spinach instead of or along with basil)
4 Garlic Cloves
2 Tbsp good Olive Oil
1/4 – 1/2 Cup nuts of choice (macadamia are tasty)
1/2 C Grated Parmesan
1/4 Tsp or so Sea Salt
What to do:
Put half the greens into the blender along with the nuts and garlic. Once the mixture is semi-chunky add the rest of the basil and gave it another whirl. Once it is blended but before it’s too smooth you want to slowly add the olive oil, blending continuously. I put the cheese and salt in last and after another quick whirl it’s done. Easy peasy! Salt and pepper to taste.
I didn’t end up with a ton of sauce, but pesto goes a long way so I was able to freeze a jar and still have enough left over for Homemade Pesto Pizza.
